Ingredients

Sweet Potato Base:
  • - 2 medium sweet potatoes cut into ½-inch thick rounds, skin-on
  • - 2 tbsp extra-virgin olive oil
  • - ½ tsp salt
  • - ¼ tsp black pepper
  • - ½ tsp smoked paprika
Toppings & Hot Honey Glaze:
  • - 150g Brie cheese cut into thick slices
  • - ⅓ cup dried cranberries
  • - ⅓ cup walnuts roughly chopped
  • - 3 tbsp honey
  • - ½ tsp red chili flakes
  • - Fresh thyme sprigs for garnish

Method

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice cleaned sweet potatoes into ½-inch thick rounds. Toss in a bowl with olive oil, salt, black pepper, and smoked paprika.
  3. Spread rounds in a single layer on the baking sheet and roast for 20 to 25 minutes, flipping halfway through until tender and golden.
  4. (Optional) Lightly smash the center of each round with the bottom of a glass for extra crispiness.
  5. In a dry skillet, toast chopped walnuts over medium heat for 2-3 minutes. Lower heat, add honey and red chili flakes, stirring for 1 minute until glazed. Remove from heat.
  6. Top each warm sweet potato round with a slice of Brie cheese. Return to the oven for 3 minutes until cheese is melted and soft.
  7. Transfer to a platter, top with dried cranberries, hot honey glazed walnuts, and fresh thyme. Serve warm.

Notes

- To keep the base extra crispy, ensure sweet potato slices are dry before tossing with olive oil and do not overcrowd the baking pan.
- Reheat leftover bites in an air fryer or oven at 350°F (175°C) for 5 minutes.
