Sweet Potato Toasts Recipe

Ingredients
  

For the Sweet Potato Base:
  • - 2 large sweet potatoes cut crosswise into 1-inch thick rounds
  • - 2 tbsp extra virgin olive oil
  • - 1 tsp smoked paprika
  • - 1/2 tsp garlic powder
  • - 1/2 tsp fine sea salt
  • - 1/4 tsp freshly ground black pepper
For the Creamy Layer:
  • - 1 cup cottage cheese or whipped feta
  • - 1/4 cup crumbled feta cheese
For the Avocado Tomato Salsa Topping:
  • - 1 medium ripe avocado diced
  • - 1 cup cherry tomatoes quartered, mixed red and yellow
  • - 1/4 cup red onion finely diced
  • - 1 small jalapeño finely sliced or chopped, optional
  • - 1/4 cup fresh cilantro or flat-leaf parsley chopped
  • - 1 tbsp fresh lime juice
  • - 1 tbsp extra virgin olive oil for finishing drizzle

Method
 

  1. Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Arrange the 1-inch thick sweet potato rounds on the baking sheet in a single layer.
  3. Brush both sides of each sweet potato slice generously with extra virgin olive oil.
  4. Sprinkle evenly with smoked paprika, garlic powder, sea salt, and black pepper.
  5. Bake for 25 to 30 minutes, flipping halfway through, until edges are deep golden, charred, and centers are fork-tender.
  6. While potatoes roast, prepare salsa by combining diced avocado, quartered cherry tomatoes, red onion, jalapeño, and chopped herbs in a bowl. Drizzle with lime juice and toss gently.
  7. Transfer warm roasted sweet potato rounds to a platter.
  8. Spoon a generous tablespoon of cottage cheese onto each slice, then top with avocado-tomato salsa and crumbled feta.
  9. Drizzle with extra virgin olive oil and serve warm immediately.

Notes

- To air-fry: Cook seasoned rounds at 390°F for 15-18 minutes, flipping halfway.
- For meal prep, keep cooked sweet potato slices and fresh salsa in separate containers in the fridge for up to 4 days. Warm potatoes before assembling.
