Method
- Toast the sourdough slice until golden and firm.
- In a small bowl, lightly mash the avocado with lemon juice and salt.
- Spread the mash evenly across the toast.
- Top with feta, tomatoes, and red pepper flakes.
- Drizzle with olive oil and serve immediately.
Notes
Note: For the best results, use Sourdough or Sprouted Grain bread. To keep your avocado from browning if preparing the mash 15–30 minutes ahead of time, press a piece of plastic wrap directly onto the surface of the mash to eliminate air contact. If you're looking for a vegan option, swap the feta for hemp seeds or a squeeze of tahini.
