The Ultimate Mediterranean Avocado Toast

Ingredients
  

  • 1 thick slice Sourdough bread
  • 1/2 Ripe Avocado
  • 1 tsp Lemon juice
  • 1/4 tsp Flaky sea salt
  • 1/8 tsp Red pepper flakes
Optional:
  • 2 tbsp Crumbled feta 3 cherry tomatoes (halved)

Method
 

  1. Toast the sourdough slice until golden and firm.
  2. In a small bowl, lightly mash the avocado with lemon juice and salt.
  3. Spread the mash evenly across the toast.
  4. Top with feta, tomatoes, and red pepper flakes.
  5. Drizzle with olive oil and serve immediately.

Notes

Note: For the best results, use Sourdough or Sprouted Grain bread. To keep your avocado from browning if preparing the mash 15–30 minutes ahead of time, press a piece of plastic wrap directly onto the surface of the mash to eliminate air contact. If you're looking for a vegan option, swap the feta for hemp seeds or a squeeze of tahini.
