Tomato Basil Garlic Bread

Ingredients
  

  • 1 loaf Sourdough or Italian Bread sliced
  • 3 tbsp Extra Virgin Olive Oil
  • 3 cloves Garlic finced
  • 1 cup Roma Tomatoes finely diced
  • 1/4 cup Fresh Basil chopped
  • 1/2 tsp Sea Salt
  • 1/4 tsp Black Pepper
  • Optional: 1/4 cup shredded Mozzarella

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Mix olive oil and minced garlic in a small bowl.
  3. Place bread slices on a baking sheet and brush with the garlic oil.
  4. Top each slice with diced tomatoes. Season with salt and pepper.
  5. Bake for 10 minutes until edges are toasted.
  6. Remove from oven, sprinkle with fresh basil (and cheese if using), and serve.

Notes

  • Bread Choice: Use a sturdy, crusty loaf like sourdough or ciabatta. Soft sandwich bread will turn soggy under the weight of the tomatoes.
  • Moisture Control: If your tomatoes are extra juicy, seed them or pat them dry with a paper towel after dicing to ensure the bread stays crispy.
  • Garlic Intensity: For a milder flavor, sauté the minced garlic in the olive oil for 1 minute before brushing it onto the bread.
  • The Broiler Finish: For a restaurant-style finish, broil the bread for the final 60 seconds to get those charred, bubbly edges.
  • Basil Timing: Add half the basil before baking for an earthy flavor, and the remaining half fresh before serving for a bright, aromatic punch.
