Ingredients

For the Chicken Roll-Ups:
  • - 4 boneless skinless chicken breasts approx. 6-8 oz each
  • - 2 tbsp extra virgin olive oil divided for sautéing and searing
  • - 2 cups fresh baby spinach
  • - 1/2 cup sun-dried tomatoes in oil drained and finely chopped
  • - 3/4 cup shredded mozzarella cheese
  • - 1/4 cup freshly grated Parmesan cheese
  • - 1 tsp dried Italian seasoning
  • - 1/2 tsp garlic powder
  • - 1/2 tsp smoked paprika
  • - 1/2 tsp fine sea salt
  • - 1/4 tsp freshly ground black pepper
For the Garlic-Herb Pan Sauce:
  • - 2 tbsp extra virgin olive oil
  • - 2 tbsp unsalted butter melted
  • - 3 cloves garlic finely minced
  • - 1/4 cup low-sodium chicken broth
  • - 2 tbsp fresh flat-leaf parsley finely chopped
  • - 1 pinch crushed red pepper flakes

Method

Butterfly and Flatten:
  1. Slice each chicken breast horizontally almost all the way through and open like a book. Place between plastic wrap and pound with a meat mallet to an even 1/4-inch thickness.
Wilt Spinach:
  1. Heat 1 tbsp extra virgin olive oil in a skillet over medium heat. Add baby spinach and cook for 1-2 minutes until wilted. Squeeze thoroughly in paper towels to remove all excess liquid.
Assemble Filling:
  1. Sprinkle inside of chicken with salt, pepper, and garlic powder. Layer wilted spinach, chopped sun-dried tomatoes, mozzarella, and Parmesan cheese evenly over each breast, leaving a 1/2-inch border.
Roll and Season:
  1. Roll chicken tightly starting from the small end. Fasten seams firmly with 3 to 4 wooden toothpicks. Rub outside with 1 tbsp extra virgin olive oil, Italian seasoning, and smoked paprika.
Sear:
  1. Heat 1 tbsp extra virgin olive oil in a skillet over medium-high heat. Sear roll-ups seam-side down for 2 to 3 minutes per side until golden brown.
Bake with Sauce:
  1. Place seared roll-ups in a baking dish. Whisk melted butter, 2 tbsp olive oil, minced garlic, chicken broth, parsley, and red pepper flakes together. Pour over chicken. Bake at 375°F (190°C) for 15-20 minutes until internal temperature reaches 165°F (74°C).
Rest & Serve:
  1. Rest chicken for 5 minutes, remove toothpicks, slice into pinwheels, and spoon garlic-herb pan sauce over top before serving.

Notes

- Always count and remove all toothpicks before slicing or serving.
- Squeezing moisture out of the spinach prevents soggy chicken and water-diluted sauce.
- For extra flavor, substitute half the mozzarella with crumbled feta cheese.
