Ingredients

  • - 2 pre-made oval naan flatbreads or Greek pita crusts
  • - 4 oz soft goat cheese chèvre, softened to room temperature
  • - 3 tbsp plain whole-milk Greek yogurt or labneh
  • - 1/2 cup high-quality fig jam or fig spread
  • - 1/3 cup walnut halves toasted and roughly chopped
  • - 2 tbsp raw honey for drizzling
  • - 1 tbsp fresh thyme leaves plus small sprigs for garnish
  • - 1/2 tsp flaky sea salt
  • - 1 tsp extra virgin olive oil optional finishing drizzle

Method

  1. Preheat oven to 400°F (200°C). Place flatbreads directly on a baking sheet and par-bake for 5-7 minutes until edges are golden and lightly crisp.
  2. In a food processor or bowl with a hand mixer, blend softened goat cheese and Greek yogurt for 1-2 minutes until smooth, light, and cloud-like.
  3. Spread the whipped goat cheese evenly over the warm flatbreads, leaving a 1/2-inch border around the edges.
  4. Spoon dollops of fig jam over the whipped cheese layer and gently swirl with a knife.
  5. Scatter chopped toasted walnuts evenly across the top.
  6. Return flatbreads to the oven and bake for 3-4 minutes until warmed through and jam is glossy.
  7. Remove from oven and immediately drizzle with honey and extra virgin olive oil. Garnish with fresh thyme leaves and flaky sea salt. Slice and serve warm.

Notes

- Toast walnuts in a dry pan over medium heat for 3 minutes before topping.
- Ensure goat cheese is at room temperature for the smoothest whipped consistency.
- Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a 350°F oven for 5 minutes.
