Ingredients

For the Salad:
  • - 2 cans 15 oz each cannellini beans, drained and thoroughly rinsed
  • - 1 can 14 oz artichoke hearts (in water or marinated), drained and quartered
  • - 1 cup cherry or grape tomatoes cut in half
  • - 1/2 cup Kalamata olives pitted and sliced in half
  • - 1/2 small red onion very thinly sliced
  • - 1/2 cup feta cheese crumbled
  • - 1/4 cup fresh flat-leaf parsley finely chopped
For the Zesty Herb Vinaigrette:
  • - 1/4 cup extra-virgin olive oil
  • - 2 tbsp fresh lemon juice or red wine vinegar
  • - 2 cloves garlic minced
  • - 1 tsp Dijon mustard
  • - 1/2 tsp dried oregano
  • - 1/2 tsp kosher salt or to taste
  • - 1/4 tsp freshly cracked black pepper

Method

Prep the Base:
  1. Open the cans of white beans. Pour into a colander, rinse thoroughly with cold running water, and let drain well for a few minutes. Halve the cherry tomatoes, slice the olives, quarter the artichoke hearts, and thinly slice the red onion.
Whisk the Vinaigrette:
  1. In a small bowl or mason jar, combine extra-virgin olive oil, fresh lemon juice (or red wine vinegar), minced garlic, Dijon mustard, dried oregano, salt, and black pepper. Whisk vigorously until emulsified.
Toss Ingredients:
  1. In a large mixing bowl, combine rinsed cannellini beans, quartered artichokes, halved tomatoes, olives, and sliced red onion. Pour dressing over the salad and gently fold using a silicone spatula. Fold in chopped parsley and most of the crumbled feta.
Garnish & Rest:
  1. Transfer to a serving bowl. Top with remaining feta and a dash of black pepper. Let sit at room temperature for 15-20 minutes before serving to allow flavors to absorb.
