Authentic Mediterranean Zucchini Fritters Recipe made with shredded squash, savory Parmesan, garlic, and dill. Fried to golden perfection in extra virgin olive oil and served with fresh lemon and tzatziki.

Ingredients
  

For the Fritters:
  • - 2 medium zucchinis approx. 500g / 1 lb, shredded
  • - 1 tsp fine sea salt for sweating zucchini
  • - 2 large eggs beaten
  • - 1/2 cup Parmesan cheese or aged Kefalotyri/Pecorino, finely grated
  • - 1/2 cup whole wheat flour or all-purpose / chickpea flour
  • - 2 cloves garlic minced
  • - 1/2 tsp black pepper
  • - 1/2 tsp paprika
  • - 3 tbsp extra virgin olive oil for frying
For Garnish & Serving:
  • - Flaky sea salt
  • - Fresh dill sprigs
  • - Lemon wedges
  • - 1 cup Tzatziki sauce optional

Method
 

Sweat & Wring Zucchini:
  1. Shred the zucchinis using the large holes of a box grater. Transfer to a colander, toss with 1 tsp fine salt, and rest for 15 minutes over a sink. Wrap the salted zucchini in a clean dish towel and wring out as much liquid as possible until dry.
Mix Batter:
  1. In a large bowl, whisk beaten eggs, dry shredded zucchini, grated Parmesan cheese, minced garlic, black pepper, and paprika. Fold in flour until a cohesive batter forms.
Shape & Fry Patties:
  1. Heat 3 tablespoons of extra virgin olive oil in a skillet over medium heat (350°F / 175°C). Scoop 2-3 tablespoons of batter per patty into the pan, shaping them into thin oblong patties. Fry for 3 to 4 minutes per side until golden brown and crisp.
Drain & Serve:
  1. Transfer cooked fritters to a paper towel-lined plate. Immediately sprinkle with flaky sea salt. Garnish with fresh dill sprigs and lemon wedges, and serve hot with cool tzatziki dip.

Notes

- Air Fryer Option: Cook at 375°F (190°C) for 10-12 minutes on parchment paper, flipping halfway and spraying lightly with extra virgin olive oil.
- Reheating Tip: Reheat leftover fritters in a dry skillet or air fryer at 350°F (175°C) to restore crispness. Avoid microwaving.
