Zucchini Garlic Bites Recipe

Golden, crisp baked zucchini garlic bites packed with freshly grated parmesan, minced garlic, and fresh Mediterranean herbs. Low-calorie, healthy, and perfectly crispy!

Ingredients
  

  • - 2 cups fresh zucchini grated (approx. 2 medium zucchinis)
  • - 2 cloves garlic finely minced
  • - 1/2 cup Parmigiano-Reggiano freshly grated
  • - 1/2 cup whole-wheat panko breadcrumbs
  • - 1 large egg beaten
  • - 2 tbsp fresh chives minced
  • - 1 tbsp fresh parsley finely chopped
  • - 1/2 tsp sea salt
  • - 1/2 tsp fresh cracked black pepper
  • - 1 tbsp Extra Virgin Olive Oil EVOO spray or light brush

Method
 

Preheat Oven:
  1. Heat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper.
Squeeze Moisture:
  1. Place grated zucchini in a clean dish towel or cheesecloth. Twist and squeeze tightly over the sink to extract as much liquid as possible.
Combine:
  1. In a bowl, stir together dried zucchini, minced garlic, whole-wheat panko breadcrumbs, grated parmesan, egg, chives, parsley, salt, and pepper until cohesive.
Shape:
  1. Scoop 1-tablespoon portions and gently roll into uniform 1-inch round balls. Place on the prepared sheet.
Bake:
  1. Lightly mist or spray the tops with Extra Virgin Olive Oil. Bake for 15–20 minutes until golden and crisp.
Serve:
  1. Serve hot alongside Greek Tzatziki or warm tomato marinara sauce.

Notes

- Air Fryer Option: Cook in a single layer at 375°F (190°C) for 10-12 minutes, shaking gently halfway.
- Gluten-Free Option: Use certified gluten-free panko or almond flour.
- Avoid Pork & Wine: This traditional vegetarian adaptation contains no pork or wine components.
